Sweet and Sour Tofu with Rice

Servings 4 people


  • 1 tbsp Vegetable Oil
  • 75 g Soft Tofu
  • 1/2 Onion
  • 1/2 Pepper
  • 80 g Tinned Pineapple
  • 1 tbsp Ketchup
  • 1 tbsp Rice Wine Vinegar
  • 1/2 tbsp Soy Sauce
  • 200 g Rice


  • Heat half the oil in a frying over a medium heat. Fry the onion and pepper and any other vegetables such as courgette for 5-6 mins, or until the veg begins to soften. Add the pineapple, ketchup, vinegar, soy sauce and 50ml water, and simmer for 1 min, or until slightly reduced.
  • Stir in the soft tofu back into the pan. If you have received firm tofu try this off first with oil and some soy sauce.
  • Cook the basmati rice following pack instructions. Serve the tofu mix in bowls with the rice.
