Stuffed mushrooms
Ingredients
- 4 large mushrooms/peppers
- 1 onion
- 2 garlic cloves
- 1 tbsp mixed fajita seasoning- paprika, oregano, chilli, salt and pepper
- 2 tbsp tomato puree
- 2 tbsp water or more if needed
- 1 tin spice beans
- 80 g grated cheddar
Instructions
- Pre heat the oven to 200c/fan 180c/gas 6.
- Cut of the stalk and keep to one side. Season the mushrooms.
- Chop the mushroom stalks and add to the chopped onion, garlic, water, puree. simmer until soft.
- Add the seasoning tinned beans. cover and simmer for 5 minutes. add more water if it looks dry.
- Spoon the mixture into the mushroom/peppers and top with the grated cheese. Place in the oven until the cheese is melted. the pores may need a bit longer and covering with foil. Serve with the roasted vegetables and rice if necessary.
