Stuffed mushrooms

  • 4 large mushrooms/peppers
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp mixed fajita seasoning- paprika, oregano, chilli, salt and pepper
  • 2 tbsp tomato puree
  • 2 tbsp water or more if needed
  • 1 tin spice beans
  • 80 g grated cheddar


  • Pre heat the oven to 200c/fan 180c/gas 6.
  • Cut of the stalk and keep to one side. Season the mushrooms.
  • Chop the mushroom stalks and add to the chopped onion, garlic, water, puree. simmer until soft.
  • Add the seasoning tinned beans. cover and simmer for 5 minutes. add more water if it looks dry.
  • Spoon the mixture into the mushroom/peppers and top with the grated cheese. Place in the oven until the cheese is melted. the pores may need a bit longer and covering with foil. Serve with the roasted vegetables and rice if necessary.
