Spiced Celeriac Soup
- 1 chopped onion
- 1 chopped garlic clove
- 1/2 tsp ground cumin and coriander
- 1 pinch chilli flakes
- 1 peeled and diced celeriac
- 1 potato, diced
- hot stock
- splash of double cream
- In a pan soften 1 onion in olive oil. Add garlic, cumin, coriander and chilli flakes. Fry for 1 minute.
- Add celeriac and potato. Cover with stock and simmer until all the vegetables are tender. Add cream and blend until smooth. Serve with crusty bread.
