Roasted Vegetable Couscous

Servings 4 people


  • Baking Tray
  • Tin Foil


  • 1 tbsp Oil
  • 100-150 g Mushrooms
  • 1 Onion
  • 2 Carrots
  • 1 Courgette
  • 2 packets Couscous


  • Cut up vegetables, onion, carrots and  courgette into 1-2cm chunks.
  • Coat with a tbsp of and place on a baking tray in the oven at 160⁰c covered with tin foil for 20 mins.
  •  Add chopped mushrooms and cover again for 10 mins more in the oven.
  •  Make up the couscous as per the packet instructions and mix together when all the liquid has been absorbed. Season and serve.
