Roasted Vegetable Couscous
- Baking Tray
- Tin Foil
- 1 tbsp Oil
- 100-150 g Mushrooms
- 1 Onion
- 2 Carrots
- 1 Courgette
- 2 packets Couscous
- Cut up vegetables, onion, carrots and courgette into 1-2cm chunks.
- Coat with a tbsp of and place on a baking tray in the oven at 160⁰c covered with tin foil for 20 mins.
- Add chopped mushrooms and cover again for 10 mins more in the oven.
- Make up the couscous as per the packet instructions and mix together when all the liquid has been absorbed. Season and serve.
