Honey Roasted Carrots

Ingredients
  

  • 500 g Carrots
  • 2 tbsp Olive oil
  • 4 tbsp Clear Honey
  • 2 tbsp Dijon Mustard

Instructions
 

  • Preheat the oven to 220c and heat up the roasting tray. Slice the carrots lengthways into halves so they are evenly sliced.
  • In a large bowl whisk together the olive oil, honey and mustard. Add the carrots and toss to coat. place into the hot tray and roast for 30 minutes until caramelised.

Roasted Pork Shoulder with green lentils and red onions

Prep Time 10 minutes
Servings 4 people

Ingredients
  

  • 500 grams pork shoulder steaks
  • 4 Red Onions
  • 1 tspn Ground Cumin
  • 2 cloves Cloves of Garlic
  • 1 tin Green Lentils

Instructions
 

  • Peel red onions and cut into wedges. Lay them in the base of a baking tray or ovenproof dish.
  • Drain the green lentils and pour over the top of the onions.
  • Place the pork shoulder steaks on top. Season with slat and pepper. Scatter ground cumin evenly over all the ingredients.
  • Add two tablespoons of water. Cover with tin foil. Place in the oven: temp 180c for 30-35 mins. Remove the tin foil for the last 10 mins to brown up. Garnish with any fresh herbs if desired.
