Oven Baked Pork Chops and Winter Vegetables

  • Baking Tray


  • Left Over Vegetables
  • 4 Pork Chops
  • 2 tbsp Oil
  • Handful of Chopped Fresh Herbs


  • Preheat oven to 180C/200C Fan/ Gas Mark 5
  • Prepare any or all of the winter vegetables that you have left from the week by peeling and chopping into 3cm chunks- leeks, potatoes, carrots, onions and parsnips.
  • Lightly coat in oil and season with salt and pepper. Scatter the herbs and place on the tray and into the oven for 15-20 minutes.
  • Take out of the oven and place pork chops onto and then cook again for another 20 minutes or until the pork chop and cooked.
