Preheat oven to 180C/160C Fan/ Gas Mark 4.
Break up cauliflower into florets and cut up potatoes into even chunks. Equal amounts of potatoes to cauliflower. Parboil these together in salted water till tender.
Place in dish and spread over cream cheese and grate cheese and season. Place into the oven til l the cheese has melted and is golden brown, around 20 minutes.
Wash beetroot thoroughly and chop. Chopped up onions and garlic into large slices and pace them on a trat and coat into oil and tin foil. Bake for 1 and 1/2 hours.
