Place chopped cauliflower in to a saucepan and cover fully with water. Bring to a boil. Reduce heat, cover and simmer till tender, this take about 5-10 minutes. Then drain away water.
In a large bowl, combine the cauliflower, sour cream and cheese, peppers and salt then transfer to the dish. Sprinkle with left over cheese.
Bake uncovered at 325F or 160C till heated through, 30-35 minutes.
