Cut up vegetables, onion, carrots and courgette into 1-2cm chunks.
Coat with a tbsp of and place on a baking tray in the oven at 160⁰c covered with tin foil for 20 mins.
Add chopped mushrooms and cover again for 10 mins more in the oven.
Make up the couscous as per the packet instructions and mix together when all the liquid has been absorbed. Season and serve.
